So there's something you should know about me. I am a sucker for homemade pizza. I make it at least 1 time a week. Maybe 2. Sometimes 3. Seriously, I am addicted. I can easily eat half a pizza and still want more. That's just how much I love it.
Some people have either tried the pizza or seen pictures and asked for the recipe. But here's the thing. I never follow a recipe because Jake never follows a recipe, and he's the one that taught me how to make pizza. I make pizza based on what we have in our fridge, what we're craving, and what's on sale at the market... Real precise, I know.
But there is one pizza, that keeps making its appearance, so I thought I would share the recipe with you, because it's seriously just so delicious. Again, all measurements are just guesses. There are no rules here. Ok? Ok. Here we go.
Butternut squash, goat cheese, and caramelized onion pizza.
Ingredients:
Pizza dough
1 yellow onion
2 cups butternut squash
1/3 cup goat cheese
1/2 cup mozerella cheese
A sprinkle of parmesan
Butter
Olive Oil
Minced Garlic
Italian Seasoning
Red Pepper Flakes
Fresh basil {if you have it}
Salt & Pepper
Recipe:
Preheat the oven to 425 degrees. Spray a cookie sheet with Pam. Spread butternut squash evenly across sheet and sprinkle with salt, pepper, and red pepper flakes. Drizzle with olive oil. Bake for about 20 minutes or until edges are browned.
Meanwhile, cut up yellow onion and drizzle olive oil in saute pan. Saute onion until golden.
Spray a second cookie sheet. Roll out pizza crust on entire sheet and sprinkle lightly with Italian seasoning. Spread chunks of goat cheese evenly across pizza. Then spread your sauteed onion and roasted butternut across pizza. Top with mozzerella and small chunks of butter. Season with fresh basil, salt and pepper.
Cook in the oven for 18-20 minutes or until edges are golden brown... And enjoy!

This sounds soo good. We make pizza on pita bread at least once a week. I've never thought of putting squash on it though. Since I just happen to have both I'll have to try it out this week.
