I'm sure you've all seen the delicious looking "Sugar Cookie Bars" on Pinterest.
Well... I have too, so I finally decided to make them, with my own twist of course.

You see, I have a problem not following recipes. I always want to try substitutes and I never seem to have just the "right" ingredients on-hand... This recipe was no exception. I used greek yogurt and milk instead of their unhealthy alternatives {granted these are still very naughty cookies!} I wanted an element of these bars to be slightly unexpected {I kind of resent Pinterest for zapping the world of all creativity... BUT ANYWAY} That's how these sugar cookie bites were born. They are delicious and cute in a sweet little package. I hope you enjoy these as much as we did!
Cookie Ingredients:
2 1/2 cups flour
1/2 cup butter
1 cup white sugar
1 egg
1 egg white
1 Tbsp greek yogurt
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
Preheat oven to 375 degrees. Spray a 13″ x 9″ baking dish. Whip together butter and sugar until fluffy. Stir in egg and egg white. Add yogurt and vanilla. Mix in the baking powder and salt. Press dough into the greased dish. Bake 17 minutes until the edges are slightly golden. Let bars completely {this is when I made the frosting} then frost, sprinkle, and cut into little cute bites.
Vanilla Frosting Ingredients:
1/4 cup unsalted butter, softened
2 cups powdered sugar
2-3 Tbsp fat-free milk
1 tsp vanilla
Food coloring
